ONE MICHELIN STAR FOR THE NEW METHOD OF FRENCH CUISINE
The annual “Michelin Awards” have always been a major event in the Hong Kong catering industry, however, the inaugural “Michelin Guide Hong Kong Macau 2019” have just been unveiled in Macau in mid-December for the first time. A total of 82 Hong Kong and Macau restaurants were selected for feature. The upgraded restaurant included two upgrades to Michelin 3-star , 4- star first-time two stars, and six first-ever one-star ranks. In the new star-rated restaurant, the focus is on Belon, which specialises in new French cuisine.
- Belon, located in Erie Street near Central, looks the same as the average French restaurant from the outside. However, it has been in full swing for several years and became the 40th best restaurant in Asia in 2018. There is no five star luxury decoration, and instead, the focus is on a large mirror and dazzling chandelier, as well as a blue-green terrazzo dining table. This French restaurant is decorated with warm lighting and is located in the heart of Soho. With a vibrant and exquisite cuisine in the 11th district of Paris, France, there is a friendly and laidback environment throughout the restaurant.

Executive Chef Daniel Calvert
- Daniel Calvert, executive chef at Belon, has been involved in the restaurant industry since the age of 16. He started at world-famous London restaurant The Ivy, which is known for its rigorous standards and eclectic cuisine, before later joining the Michelin two-star restaurant Pied à Terre for three years. Later, Daniel moved to New York to become a part of Michelin 3-star restaurant, Per Se, and collaborated with international top chef Thomas Keller to become a deputy chef. In 2014, he returned to Europe and joined the Epicure at Le Bristol, which is known for its evocative cuisine. The restaurant is also known as the best hotel restaurant in the world. While living in Paris, he was deeply attracted by the vitality of the 11th district, and he appreciated the exquisite and remarkable food culture throughout the city, having worked for many of the world’s top restaurants.
- Daniel is known for his dedication and attention to detail. With his passion for cooking and the spirit of perfection, he is able to showcase high-quality ingredients through skilled cooking and rich experiences. Daniel was awarded the “Best New Chef” award by Hong Kong Tatler in 2018. The restaurant emphasizes that only the best local and imported ingredients are used, and each dish needs to be carefully crafted, requiring the chef to have superb skills and a skilled execution. The main signature dish is the original roast chicken, from chickens that have been raised in Hong Kong farms. There is also a surprise dessert, Millefeuille, which is freshly made every day. It is crispy and rich, accompanied by sweet and smooth custard sauce and sweet syrup. An unforgettable combination and the reason that we know the new Michelin star is so well deserved.
